Spaghetti Bolognese

A slow-simmered beef and tomato sauce over spaghetti — a genuine weeknight classic.

Easy · 75 min (15 prep + 60 cook) · serves 4

Ingredients

  • • 400g spaghetti
  • • 500g beef mince
  • • 1 onion, diced
  • • 2 carrots, diced
  • • 2 celery stalks, diced
  • • 3 cloves garlic, minced
  • • 2 tbsp tomato paste
  • • 800g canned tomatoes
  • • 125ml red wine
  • • 1 tsp dried oregano
  • • 2 bay leaves
  • • Parmesan, grated, to serve
  • • Olive oil
  • • Salt
  • • Black pepper

Method

  1. Heat olive oil in a large pot and cook the onion, carrot and celery for 8 minutes until softened.
  2. Add the garlic and cook for 1 minute, then add the mince and brown well, breaking it up as it cooks.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the wine and simmer until mostly evaporated.
  5. Add the tomatoes, oregano and bay leaves. Simmer uncovered for 45 minutes, stirring occasionally, until thick.
  6. Season to taste and discard the bay leaves.
  7. Cook the spaghetti to packet instructions, then toss through the sauce.
  8. Serve topped with grated parmesan.
