Peach Cobbler

Juicy baked peaches under a golden, biscuit-like topping.

Easy · 55 min (15 prep + 40 cook) · serves 6

Ingredients

  • • 6 peaches, sliced (or 800g canned peaches, drained)
  • • 80g sugar
  • • 1 tbsp lemon juice
  • • 1 tsp ground cinnamon
  • • 200g plain flour
  • • 2 tsp baking powder
  • • 80g sugar, extra
  • • 100g cold butter, cubed
  • • 150ml milk

Method

  1. Heat oven to 190°C. Toss the peaches with the sugar, lemon juice and cinnamon, and spread into a baking dish.
  2. Whisk the flour, baking powder and extra sugar together, then rub in the butter until it resembles coarse crumbs.
  3. Stir in the milk until just combined to a soft, slightly lumpy batter.
  4. Dollop spoonfuls of the batter over the peaches, leaving some gaps.
  5. Bake for 35-40 minutes until golden and the fruit is bubbling.
  6. Serve warm with cream or ice cream.
