A creamy, slow-stirred risotto loaded with mushrooms and parmesan.
Medium · 45 min (10 prep + 35 cook) · serves 4
Ingredients
- • 1.2 litres vegetable stock
- • 2 tbsp olive oil
- • 40g butter
- • 1 onion, finely diced
- • 300g mushrooms, sliced
- • 2 cloves garlic, minced
- • 320g arborio rice
- • 125ml white wine
- • 60g parmesan, grated, plus extra to serve
- • 2 tbsp parsley, chopped
- • Salt
- • Black pepper
Method
- Keep the stock warm in a saucepan over low heat.
- Heat the olive oil and half the butter in a wide pan and cook the mushrooms over high heat until golden. Set aside.
- Add the onion to the pan and cook for 5 minutes, then add the garlic and cook for 1 minute.
- Stir in the rice and cook for 1 minute until glossy, then add the wine and stir until absorbed.
- Add the warm stock a ladle at a time, stirring frequently and waiting for each addition to be absorbed before adding more, for about 18-20 minutes until the rice is creamy and just tender.
- Stir through the mushrooms, remaining butter and parmesan. Season to taste and scatter with parsley.
