Ingredients

  • • 6 large onions, thinly sliced
  • • 60g butter
  • • 1 tbsp olive oil
  • • 1 tsp sugar
  • • 2 tbsp plain flour
  • • 1.5 litres beef stock
  • • 125ml white wine
  • • 2 sprigs thyme
  • • 1 baguette, sliced
  • • 200g gruyere, grated
  • • Salt
  • • Black pepper

Method

  1. Melt the butter with the oil in a large pot. Add the onions and sugar and cook over low heat, stirring often, for 40 minutes until deeply golden.
  2. Stir in the flour and cook for 1 minute.
  3. Add the wine and scrape up any browned bits, then add the stock and thyme. Simmer for 20 minutes.
  4. Season to taste and discard the thyme sprigs.
  5. Ladle into oven-proof bowls, top each with a slice or two of baguette and a generous layer of gruyere.
  6. Grill until the cheese is bubbling and golden.
