Classic Apple Pie

A buttery double-crust pie packed with spiced, tender apples.

Medium · 90 min (40 prep + 50 cook) · serves 8

Ingredients

  • • 500g plain flour
  • • 250g cold butter, cubed
  • • 1 tsp salt
  • • 125ml iced water
  • • 1.5kg apples, peeled and sliced
  • • 150g sugar
  • • 2 tsp ground cinnamon
  • • 1 tbsp lemon juice
  • • 2 tbsp plain flour, extra
  • • 1 egg, beaten
  • • 2 tbsp sugar, extra

Method

  1. Pulse the flour, butter and salt in a food processor until it resembles breadcrumbs. Add the iced water gradually until the dough just comes together. Divide in two, wrap and chill for 30 minutes.
  2. Toss the apples with the sugar, cinnamon, lemon juice and extra flour.
  3. Heat oven to 200°C. Roll out one pastry disc and line a pie dish, trimming the edges.
  4. Fill with the apple mixture.
  5. Roll out the second disc and place over the top, sealing and crimping the edges and cutting a few steam vents. Brush with egg and scatter with extra sugar.
  6. Bake for 15 minutes, then reduce heat to 180°C and bake for a further 30-35 minutes until golden and the filling is bubbling.
